It’s a Chili Night!!


So, who’s making chili on this cold, rainy Monday? There’s always a difference of opinion as to what to have to accompany your chili. When I serve it here I always make sure to have crackers, fritos and my favorite, cornbread!!! Which brings on another debate, cake like cornbread or thin and crispy? My personal favorite is thin and crispy! I even made my Mom come up with the recipe for hers so I could make it myself to go with greens! Here’s her recipe, I usually make it in a 8.5 inch cake pan but I have used a cast iron skillet!
Mix: 1 cup cornmeal, 1/4 cup self rising flour, 1/4 cup Crisco, 2/3 cup buttermilk and 1/4 cup water. Sometimes I have to add a little more water or buttermilk.
Put into a greased pan and bake at 400 for 15-20 minutes depending upon how crispy you want your crust.
